OK, we've just found the answer to the server config under Lion problem. I'm 
afraid that, although this may have seemed obvious to Apple, it didn't to us 
and I'll tell you why.

On Apple's website there is a "Server Administration 10.7" application. The 
same application works in 10.6, and there have been version of it since at 
least Tiger.

So, we naturally assumed that the same GUI tools were used in Lion and, indeed, 
when we ran them they looked as though they were the tools to use.

However, we just discovered that what you actually do is run the main 
Server.app file again, and in it there is an administration console. When you 
click the right buttons and options, up pops a fully comprehensive GUI with 
more options than there were in the older versions.

So, although we now need to do a bit of humble pie creating, we don't feel 
entirely to blame; as we saw no documentation outlining the change. Why leave 
the old tools there, stripped down, and then add new tools as well?

Anyway we now have the tools we need so will get things back up and running 
shortly.
