not sure at this time as I haven't had a chance to play with Itunes but I think 
there's an option somewhere which dictates whether Art Work is put onto your 
IOS device so I'd uncheck that first.

I'm sure I've seen an "Album Artwork" in the Itunes folder on your computer but 
it may not be necessary to touch that.
