Hello Bryan,
A very topical question as it happens. Just to give you some background, I and
my research team here in Dublin have been looking at math Access. We've looked
mainly at output, but oddly enough, for reasons I can't go into in depth, input
is now becoming topical.
Honestly the best way to type math is LaTeX. So on your mac you'd type:
\frac{a+b}{c-d} and then run this through a program which converts this into
readable properly- laid-out mathematics.
Kevin Chao on twitter has been talking extensively about this but primarily
using that other OS.
Feel free to take this off-list if I can help.
