Touch typing is when you put your finger on a letter, and when you lift your finger, it is typed into the edit field.
To change to touch typing on your ios device, make sure you are in an edit field and editing is on. Then turn the rotor to typing mode, and flick up or down until you hear touch typing. Continue turning the rotor after that to take the focus off of typing mode so you don't accidentally change it back to standard typing.
