Mark -- a search using the word "synchronize" in Lion Mail's Help menu turned up the following information.
"With Internet Message Access Protocol (IMAP) and Exchange mail accounts, mailboxes and messages are stored on the server so you can access them from multiple locations or computers. Mail syncs the mailboxes on your computer with those on the server, ensuring that mailboxes on your computer reflect actions taken while you’re viewing mail on the server, such as marking messages as read, deleting messages, or moving messages between mailboxes. Before using your account offline, manually sync the account with your computer so that you know you’re working offline with up-to-date messages. Click Get Mail in the Mail toolbar or choose Mailbox > Synchronize [account name]. If you have more than one account, you can choose Mailbox > Synchronize All Accounts.
