It is a little tricky. You go to Voiceover Utility. . Then Utility Categories Table. move down to Speech. Tab Across to voices. Press the Popup button for the voice for a particular activity. You could just pick the default voice pop up. You then need the last option which is customise. This will open another dialogue. You move across to the Voices table. Interact with table and you will find all the Voice available in Lion. This is the bit that is a little tricky . Just pressing tab here will not provide necessary feedback on what you need to do. Basically you navigate the list of voices in the table and you need to interact in and out of the table to find a check box next to each voice. you need to check. each voice you want to have access to. When you are down with checking all the voices you want You tab away from the table and software update will open and download the additional voices you want. Once downloaded the voices are available anywhere you want as usual in Lion.
It may need a little trial and error but hopefully you will get there. I think there is a podcast available somewhere. . .
