Hello Douglas, Preview scans images, it does not perform OCR. For this, you need an OCR application such as ABBYY FineReader Express which you can get from the Mac Appstore. There is no free OCR solution for the Mac.
Adobe Reader, as far as I know, is not accessible with VO. Unless an app comes with its own uninstaller, you remove an app by going to the Applications folder (Command-Shift-a), locating the app and pressing Command-Delete. Then empty the trash.
