When I used VMware Fusion briefly, I was able to install Windows 7 fully without sighted assistance so long as I used the Easy Install option. As for a screen reader I used NVDA, but have heard that JAWS works very well too. As for key remapping software you will have to configure both Windows 7 using Sharp Keys and Fusion itself, or at least that has been my experienced. But I never got to use Sharp Keys. I decided to abandon Fusion for now while my Windows 7 laptop is working.
