If all your scanning is done in English, then the Docuscan solution would 
probably be the easiest to use, but not the cheapest.

Many people use ABBYY FineReader Express which handles quite a few languages, 
including up to three in the same document.

If you need a scanning solution for an iDevice, then Prizmo seems to get most 
people's votes. I certainly use it successfully and, once again, it handles 
quite a few different languages.
