Hopefully you'll get a response from someone who is more informed than me, but 
a quick search of various web sites indicates that you can just use an optical 
cable between the Apple TV and your receiver.   Basically all Apple TVs of the 
past few years (2nd and 3rd generation models) can use either HDMI cables or 
optical digital audio cables (also known as Toslink cables -- you may be using 
one with an AirPort Express to stream audio).  HDMI is more common now for the 
latest model TVs, but connecting from the ATV's optical digital audio port is 
also common for home theater receivers.

I would just buy an AmazonBasics Digital Optical Audio Toslink Cable for about 
$5.50.  They also sell an AmazonBasics High-Speed HDMI Cable and Toslink 
Digital Audio Optical Cable, 2 Pack for $9.99, so you could get one of each of 
the two kinds of cables that the ATV uses, in case you later get a receiver or 
TV that uses HDMI cables.
