In the "File" menu, you'll find an option called "Rename".

Firstly, make sure that you've selected your document with Command+A, or the 
bits that you want double-spaced.

The key to Pages is not the menus. It is the "Inspector".

1. Command+Option+I to launch the inspector.
2.  Navigate to the "Text" tab and press VO+Space
3. The "Text" option should be selected by default, but if not you'll find it 
next to the "lists" option. VO+Space to select it.
4. You'll find a slider labelled "Line Spacing" in this window. If you VO right 
from here, you'll eventually find an option that  says "Single Line Spacing. 
There is a pop-up menu here. When you open this with VO+Space, you an choose 
"Double-space" from the available options.
5. Close the inspector and your document should now be double-spaced.

Final question, how can I make VO read the type of letter (arian, times, etc) 
that I am using?
Make sure that you are interacting with the document, VO+Shift+space. You an 
then press VO+T to hear the font your document is written in.
