I did not get an answer so I had given it up and gone back to using DVD
Audio Extractor under Fusion which was giving very poor distorted audio
results.

I will go back   and try DVD Premaster now

I know this thread is a year old, but I didn't see a response to it (or I
deleted them) so the answer to Dave's question about how to get audio tracks
off of dvds using dvd remaster goes like this.
When you're choosing the tracks to be converted, there's an option to take
only the audio track.  After that's selected, it will then save the audio
track only.  If it doesn't save the output in a format you like (it's
selectable at extraction time) you can drop the output into itunes or
another audio converter to change its format.
I know it's old, but hope it helps anyway.
