Hi Matthew,

I usually just press the home button to go to the VoiceOver spotlight search 
field.  You'll automatically be in a text field, so just set the rotor to 
typing mode and flick up or down to set the typing mode you want.  Then I 
usually set the rotor to something like characters so I don't change this by 
accident.
