Hi Paul,

If the folders in your VIP mailbox are empty, you'll have to delete this by 
getting rid of the plist file.  Quit mail, and from Finder use the 
Command-Shift-G "Go to folder" shortcut.  Then type or paste in:
~/Library/Mail/V2/MailData/
(There's a leading tilde for your home directory.)
Once in that folder remove the "VIPSenders.plist" file.  Then restart mail.
