Yes, you can use your Mac to give your iPod Touch Internet access.  And Dane is 
right in saying that it is more efficient to do it via Wi-Fi, but that's not an 
option, I think, if your Mac is connecting to the internet through Wi-Fi, as 
Devin describes. (Someone correct me here if I'm wrong.). If your Mac is on an 
ethernet connection,you can turn on its Wi-Fi and create an ad hoc network 
between your iOS device and your Mac.  I think this is also described in one of 
the appendices of the Take Control of Your 802.11n AirPort Network Guide.

To answer Devin's question, I think I read once that the HippoRemote app by 
RoboHippo LLC could act as a kind of wireless trackpad or mouse for your Mac, 
and that some of the functions were accessible, but you'd have to try this out. 
 I believe there's a free, lite version you could try out to check, but I think 
this works via a Wi-Fi connection. This is only a vague recollection, from a 
post about a year ago, before the viphone list started using the Mail Archive.  
You have to install a setup program on your computer that works with the app.  
It's not something I've tried myself.
