TextEdit fulfills all these requirements.
E.G. Command right arrow end of line, command left arrow start of line,
option right arrow one word at a time  option up and down arrow etc etc.
You can also set paragraph reading on rota so just pressing up or down arrow
will read paragraph at at time.

anyone know of a good word processor software program that has extensive
keyboard commands such as:

And does anyone know of a good word processor that has a large user defined
keyboard section.
