Yes, these will be seen on your profile, you don't need to put a mobile phone number if you don't want to. Secondly, yes, if you create the account on your phone, you will just need to login on the Mac side. You cannot have spaces in a Skype name, but I believe that everything else you mentioned can work, I'm not sure about brackets though.
