Hi Jane, I don't know about a script, but you can set this from within Numbers itself.
Under the "Table" menu you'll find a submenu under "Header Columns" and another under "Header Rows". Make sure that in both submenus you select zero. I'm not quite sure what these options do, but they allow VoiceOver to provide alpha-numeric identifiers for each cell. I would tink that you could set this in the "inspector", Command+Option+I. That way, you won't need to set the option each time you open numbers or create a new table.
