Yep, sure can.
Use an apple script.
I've got some posted on my softcon mac pages at

There's scripts there for word count, line count and (I think) paragraph counts too).

Ok, strike that. I went to look, and the scripts are missing. (sorry about that) I'll put them back asap.
But, the script you want is this one.

** cut here**
tell application "TextEdit"
        count words of document 1
end tell

** cut here **
Simply paste this text into the apple script editor, and click run. That'll take the front document in text edit, and print out a word count for you in the output section of the script editor. The one I had on softcon used a dialog to give the information, so it was slightly more user friendly, but since it's missing, I guess it doesn't really matter how user friendly it was now does it. :)
I'll get that fixed.
