I have found that the R key for recording does not work reliably  when the 
musical keyboard is active. you'll have to click the record button instead of 
use the letter R  shortcut when using the musical keyboard (command shift k).

As to selecting other instruments, that is done in the track info pane. you get 
there  by pressing command I, then interacting with the info pane that appears. 
. you then browse the instruments list and whatever instrument you are 
currently on will play as you press the qwerty keys with musical typing turned 
on.
I assume you are working with only 1  track at this point. When you start 
adding tracks, you use the arrow keys (up and down) to select the track you 
want to play. But, the tracks are not named or announced, , so you have to 
either figure out what track you're on by the instrument that plays, or by 
memorizing their position in the track area.

When you finally get to the point where you're selecting and editing audio  
track regions, it will be important to set the mouse to   track the VO cursor 
as you will need to mouse click at the various regions in order to select them 
four editting, cutting, pasting, joining, etc. you can't route the mouse to VO 
as needed, because doing so causes GB to crash. But having the mouse track VO 
causes no problems and you can click the regions as needed.

A word about track types. When you select "piano" as the track type, GB is 
creating a standard software instrument track and setting it to "piano". you 
can change the instrument type as I detailed above. the other type of track is 
a "real" track, which simply means an audio track. For real tracks, you can set 
the input to whatever equipment you have eternal microphones, internal 
microphone, guitar inputs etc - it all depends on what equipment you have.
Personally, I use a Roland QuadCapture audio interface which allows me to plug 
in two XLR type microphones, or a Hi-Z instrument.
