I think the date fields have been fixed in the new version of Pages. Once you open the popover menu with VO-SHIFT-Space you can interact with the date picker as normal. I did this today and I think it was in a predefined date field in the invoice template but I could be wrong on that.
Also, when I've inserted a date it doesn't automatically update to today's date if I open the file at a later date. I have to click on it to bring up the popover menu and select today each time. Is that normal? It would be good if it dynamically showed today's date.
