You need to start with Contacts and not with Mail. Assuming you have all your email addresses in your contacts then open contact and create a new group. Now you can simply copy and paste contacts from your main table into this new group.
When you return to mail and type in the name of the group you have created in Contacts you will find that the send to box will then be populated with all the addresses you copied across to your group in the contacts app. I think the first time I did this I had to close and reopen Mail for it to recognise the group I had created in Contacts.
