I think we need a little more information as I am not sure what the specific
difficulty is.
Of course the work around of copying text from an email will work but you
should be able to save an email anywhere you want to in appropriate format.
Presumably your friend knows the techniques for navigating folders on the
Mac using the save dialogue box?
Of course the first step is to make sure that the disclosure checkbox is
checked so that the options to navigate to a specific folder is available.
What exactly is the problem they are experiencing?

Subject: saving emails to documents folder as rich text format

Hi One of my friends that has a mac is trying to save her email as rich text
format to her documents folder. It told her to rename the file so she
renamed the file. Even after renaming the file mail would not save it to the
documents folder. How do you fix this problem?
