My last post may not have been clear, the restriction to resolution 
change is in the built in monitor/analog/video board, not the logic 
board. I have used a 5260 logic board in an LC 630 chassis with an 
external monitor and use it quite happily at 800x600 or 832x624. It 
is recognized in "About this Macintosh" as a 6200 series.
Coincidentally, if you put the logic board from the LC 630 into the 
5260 chassis, it is recognized as a 580.

If the 5260 board were put into a 5200/75 chassis it would produce 
the higher resolutions supported by that chassis.

If the 6360 board were hacked into the 5260 chassis, you would only 
get 640x480 resolution. It's like hooking up apples original 13" High 
resolution RGB Monitor to a 6360, you'd only get 640x480, simply 
because it's a fixed resolution tube.

The 6360/5400/5500 series all use dimms, the 5260 uses simms, each of 
which require different voltages. You would need a new power supply, 
as the current one is set for the existing board just to use this 
series of logic boards.
Bottom line is you're stuck at 640x480. The logic board is not the 
limiting factor.
