For 2500 dollars, you're pretty much restricted to the iBook line.  I 
saw just recently our local London Drugs sell an iBook for 1999.00 
(which is overall quite cheap, even for brand-name PC's).

A warning, however...
I also read complaints (from today's Slashdot) that web browsers running 
on OS X run noticeably slower than on similar speed PC's.  This has to 
do with the fact that Aqua (the GUI) hasn't been optimized for speed, 
but rather for stability and compatibility.  The fact that much of the 
software people are running on OS X is not native OSX code doesn't help 
either.  Also take note that iBooks only have G3 processors (500/600 MHz 
varieties), and since Macs don't come with floppies anymore, so you will 
have to get a USB floppy drive.

So taking into consideration that your average iBook isn't a speed 
demon, your wife should be quite happy with it.

As an aside... I have a PowerMac 7300 with a 450 MHz Sonnet upgrade 
card... making it roughly equivalent in capabilities as the older iMacs 
and iBooks.  We use it (especially my wife) for mainly word processing 
and email/web.  No complaints (except it doesn't play high bandwidth 
quicktime trailers or mpeg4 movies very well).
