Strangely, I was dealing with a 7600 with an AV board just this morning
myself.  (I can now report that these older machines make a great mp3 / CD
player to add into a stereo with their built-in RCA jacks.  Hehehe.)

I fooled around a bit with the video capture on the machine in the past.  On
the OS installation CD is a set of programs and extensions to do with video.

The extension is called "video startup" and the program is "apple video
player".  They're definitely part of OS 9.1 and OS 8.6.

I'm also pretty sure that other editing software (Premiere, Final Cut????)
will find and use the A/V stuff, but I can't really tell you much beyond
that.
