Regarding OS X and that G3 upgrade you have in your 7600, Apple doesn't support your hardware anymore. While it is possible for you to run Mac OS X on it using a program called XPostFacto ( http://eshop.macsales.com/OSXCenter/XPostFacto/ ), it'll run slow as hell. Also, about using your DV cam as a "pass-through device" to your Mac via Firewire, your DV cam will have to have video input connections (I think most do??). Check your manual.
