Yup, it's easy to swap out the drive on a Molar - it's just a standard IDE drive, and the whole guts of the computer slide out the back on a tray. A separate ATA card wouldn't be strictly necessary, but maybe you'd get better performance, I dunno.

I notice you're in the Niagara region, so I feel like I should jump in and offer to sell you my molar, since I'm in St. Catharines and you're in the market for one. I'm the original owner and it's been a solid performer for me, though I recently upgraded to a G4 to do some video encoding.
Here are the specs:

G3 - 266MHz (Rev. B)
640 Mb Ram (It takes PC100 ram, and all three slots are used - 256 + 256 + 128)
27 Gb Hard Drive
DVD Rom drive
Original extended keyboard and a 5-button optical scroll mouse
VRam upgraded to 6Mb

It's got a USB 1.1 PCI card in it. It's also got the AV personality card with the RCA and S-Video jacks, although this card only works under OS 9. The floppy drive and front volume button also only work under OS 9 on these machines. The official last supported OS is Jaguar, but I was happily running Tiger on it using XPostfacto. I can also drop in a 12X sony CD burner if you'd prefer, or the original CD Rom drive.
