Assuming you mean on the Mac and not using your DOS card, I'd recommend Tex-Edit Plus. Lean, mean and highly AppleScriptable (so also extremely powerful for a $15 piece of shareware). Tex-Edit Plus requires Mac OS 7.1 or newer for the classic version and Mac OS 10.1 or newer for the OS X version. An earlier 68k version just called Tex-Edit (only $5) is also available - system 6.0.7 or better required.
