Re OS9, my experience on my own machines is very good.Mine was different. My G3/233 would hang a couple of times a day when working in 9. It works better (but slowly) with X.
The same is true of X :)operators have loaded all sorts of garbage onto them and don't know the first thing about housekeeping.
Though in garbage I'd include things like Norton Utilities, which installs a kext or two (iirc). Kernel extensions are generally a source of problems as they could be in OSX.
Another potential problem is installing software for 10.1 or 10.2 on 10.3, there have been a lot of changes and some things just don't do that well unless they're running on the right version of X.
Do those non-IT guys know how to ssh into an OS X box and restart the machine when it's become unresponsive to keyboard and mouse but is still visible on the network? I've been able to do that a couple of times between my G3 and G4, and it's much better than a hard restart.
At least when I do eventually go to X I'll have a few experienced guys to call on when I get problems!
I'd recommend asking advice *before* running into problems....
