Re OS9, my experience on my own machines is very good.
Mine was different. My G3/233 would hang a couple of times a day when 
working in 9. It works better (but slowly) with X.

operators have loaded all sorts of garbage onto them and don't know the
first thing about housekeeping.
The same is true of X :)
Though in garbage I'd include things like Norton Utilities, which 
installs a kext or two (iirc). Kernel extensions are generally a source 
of problems as they could be in OSX.
Another potential problem is installing software for 10.1 or 10.2 on 
10.3, there have been a lot of changes and some things just don't do 
that well unless they're running on the right version of X.

Do those non-IT guys know how to ssh into an OS X box and restart the 
machine when it's become unresponsive to keyboard and mouse but is still 
visible on the network? I've been able to do that a couple of times 
between my G3 and G4, and it's much better than a hard restart.

At least when I do eventually go to X I'll have a few experienced guys to
call on when I get problems!
I'd recommend asking advice *before* running into problems....
