Er you drag them off they go 'poof' and that's it.

You need a tool to disable dashboard completely - there was a discussion
about this a couple of weeks ago, check but thru the archives - I mentioned
Tinker Tool but there were others suggested as well

Spotlight - not sure - but if you look on versiontracker.com you'll find a
couple of programs that'll do that for you as well.
