well, you could rip the DVD with handbrake ( http:// handbrake.m0k.org/ ), and then use quicktime to extract the audio track (Window/Movie Properties/ click on the audio track then the extract button) from the resulting mp4.. A quick poke around doesn't reveal any obvious way of extracting audio only, but if you set the video frame size to something small (128x96?) it shouldn't waste as much time on video compression.

You can queue ripping multiple tracks to multiple files, so you don't have to baby sit it too much.
