To complete what Shaun and Damien said:
./soffice.bin to start OOo
For the options:
-norestore to prevent the restore wizard to appear at OOo launch
-nofirststartwizard to prevent the first start wizard to appear at OOo
launch
-writer, -draw, -calc, -base or -impress to start the appropriate module
of OOo (by default, writer is launched)
There's also environment variables which can be set:
SAL_NO_NWF=TRUE to disable native controls code
AQUA_NATIVE_MENUS=FALSE to disable native menus code
