Miguel, I've had trouble getting OOfice to work with Chinese character input as well. Try NeoOffice for now. I've found it to work with no problems regarding Chinese text input on the Mac. I'm running Tiger on an Intel Macbook Pro. I haven't found DLs for OO 2.3 for the Mac just yet, I've got 2.2 on my system now.
