I haven't looked at ntfs-3g packaging for a while, but if your
installation has the directory /System/Library/Filesystems/
ntfs-3g.fs/, moving it somewhere else should do it. You can move it
back later.

Note that programs running as root or as any other user (except the
one that mounted a MacFUSE volume) cannot access MacFUSE volumes by
default--this is intentional. There are past discussions on the whys
and wherefores of this, including how to change this behavior through
mount-time options.
