Here's the steps I took to make MacFUSE work with SSH connections
(still not sure if it was the *right* way)

1) Downloaded and installed MacFUSE 2.0
2) went to 
http://code.google.com/p/macfuse/source/browse/#svn/trunk/filesystems/sshfs/binary
3) downloaded "sshfs-static-leopard"
4) renamed the file to "sshfs" and placed in the Applications folder
5) downloaded and installed Macfusion 2.0.3
