You can look at automounting your sshfs mounts. http://code.google.com/p/macfuse/wiki/AUTOMOUNTING
Alternatively, you can play with alive interval settings (among other things) to get the behavior you want. This applies to ssh/sftp in general and isn't specific to sshfs. Do a man on ssh_config and sshd_config. Look at ServerAliveInterval and ClientAliveInterval, respectively, in the two man pages.
