Who told you that MacFUSE would be doing anything at all? It's a set of libraries and kernel components... it's not supposed to do anything except sit in the background and wait for some FUSE file system to make use of it.
One such file system is NTFS-3G, which mounts your NTFS drive in write mode. This is probably what you're really looking for.
