How did you install it?
If you built it yourself with the configure script you can 'make
uninstall', that should clear out what was installed.

If you installed my preliminary test package
(Ext2fuse-test2-catacombae.dmg), there's no uninstaller but you can list
which files were installed with the command:

lsbom /Library/Receipts/Ext2fuse.pkg/Contents/Archive.bom

Then you can remove them manually.
