In simple terms: MacFuse is a piece of software that lets you use FUSE file system drivers on a Mac. These drivers run in user mode rather than kernel mode, i.e. they don't need administrative privileges. NTFS-3g is a FUSE file system driver that enables you to mount a writable NTFS file system.
