This might be an issue with:
1. TrueCrypt
2. Your ext2 driver (fuse-ext2?)
3. MacFUSE
4. Snow Leopard itself

I'm afraid you need to gather some more information about the problem first.
FWIW, I'm using fuse-ext2 with MacFUSE on Snow Leopard, and it works 
well for me.
Maybe TrueCrypt just doesn't support Snow Leopard? (Wikipedia suggests 
that this is the case.)
