There is no way of trapping this without forcing the user to use your own commands to manipulate the files. You might be able to utilise a Finder plugin to intercept the requests and you could ship custom command line tools however when someone copies a file onto your FS you will receive (roughly) a create request for the file and the data for the file but nothing else particularly useful.
