Hello yourself,
I don't think you can do it from within iTunes directly,
but if you have iMovie, you can create a "movie" of your audio files,
set the cross-fade there, then export the audio (it'll be big!), then
use iTunes to burn your long audio track to CD.
Or you can use another audio program to do the same... Jam (from the
makers of Toast -- really!) gives you this ability, as so several
others.
