Hello again, Lee.  Here's a little follow-up info from the last two  
months:

Something I learned from more reading: anyone with an osX install  
disk can reset
  the password(s) for FileVault.  I didn't like that at all; so, I  
kept searching
  and eventually did get the CipherDisk II product.  Though it was  
only supported
  through osX v.10.3.8, it has a mess o' schemes to encrypt with,  
including AES 256
  and Blowfish.  The new product, called CipherWorks, is osX  
compatible from v.10.3
  and upward, althouth the only (published) scheme supported is AES  
256.  It also
  supports full (non-bootable) disk encryption, disk images, and file  
shredding.

I thought you might also be curious what I decided on.
  All seems to be working fine, and I'm running v.10.4.3 now.
