I did this with my beige G3 flat box over a year ago. I plugged the new drive into the CD cables temporarily, to format and partition it from the old drive, and then copied everything, system and all, from the old drive to the new. Then I put the new drive in place of the old. But I would not want to do it for anybody else because it felt so risky.
