I use the application EPSON Printer Utility which I think comes with or part of the printer drivers for the Epsons, because I can't see it listed anywhere separately on the Epson web site. You should find it in Library -> Printers -> EPSON -> Utilities. I dragged both EPSON Printer Utility and Apple's Print Center to the Dock to keep them handy.
