The Disk Burner built into OS X does not let you burn CDs in several sessions. Other software, such as Toast, lets you burn several sessions onto the same CD, and do it in several different ways in order to create multi-session or multi-volume CDs. A program that adds multi-session support to Apple's Disk Burner is CD Session Burner <http://www.sentman.com/burner/index.php>. A very powerful free CD burning program is CDRecord. It lets you do just about anything that can be done to a CD. It's a not very friendly command-line tool, but there are GUI front ends for it such as, my favorite, XCDRoast.
