Russ, for whatever value it might be, here's what I use for converting old
78s to CD (with the proper stylus, it will work the same for LPs):  I feed
the signal though my amp into an app called Sound Studio.  It has a wide
range of filters, etc., and is fairly simple to use.  (You even get a wave
form, which can be used to edit or fix various noises, although that's a bit
time-consuming.)  After you get the file the way you want it, simply save to
the desktop, then drag and drop into iTunes and burn a CD from there.   For
really bum records, I run 'em through ClickRepair (a free download) which is
an amazing app -- but also very time-consuming, which is why I use it for
only the noisiest cuts.
