Actually, what I normally would do is this:

Set preferences to edit in external editor. Close preferences. Quit  
iPhoto.

Re-open iPhoto and change preferences to edit full screen.

This way, when I double click on an image it will open in full screen  
(the behavior that I want the majority of the time). It's best for  
showing off photos and doing minor touch ups/adjustments.

Set up this way, when you right-click on a photo, there is an "open in  
external editor" option for those times that I want to use Photoshop.
Only right now, I have no right-click.
