The size that you have set up for the email reading window will cause this also. If you double click to open the message and the email window is large, An the person sending has not inserted a carriage return the sentence will just continue on its merry way till it reaches the edge of the window. Then it has to wrap to the next line.
I use a plug in WideMail for reading emails never have to double click. http://www.daneharnett.com/widemail/ It gives you a third panel in Mail to read a message body.
